2 Tbs. Olive Oil
2 Onions (chopped)
4 Garlic cloves (minced)
1 1/2 lbs. Ground Turkey
3 c. Chicken broth
2 4oz. c. chopped green chilies
2 tsp. Cumin
2 tsp. Dried Oregano
1 1/2 tsp. Cayenne Pepper
5 c. Great Northen Beans (undrained)
Heat oil, onions and garlic over medium heat for ten minutes. Then add meat, broth, chilies and spices until boiling. Reduce heat to low, then add beans. Let simmer 20-30 minutes.
This meal can be made vegetarian by taking away the meat and adding more beans, and using vegetable broth instead of chicken broth.
We topped it with Monterey Jack Cheese and Sour Cream. We also made cornbread to add some sweet to the spice.
This dish is Scrappy-Doo approved! And that is a huge stamp of approval folks!
